This is one seriously fruity salad, but you can only enjoy it for a very brief time of the year because loquat season goes by faster than a skateboarder with a jet pack.
Ingredients - makes 2 salads
1 cup Loquats (seeded, and halved)
1 cup Strawberries (top removed, and halved)
1 cup Cucumbers (peeled and sliced)
1 cup Chopped Walnuts (halves and bits)
2 oz Goat Cheese
4 cups spring mix salad greens
4 tbsp. Olive Oil
1 tbsp. White Wine Vinegar
1 tsp. Honey
1 Lime squeezed for juice only
Layer half the ingredients on each dinner-sized plate starting with field greens then: loquats, strawberries, cucumber, walnuts, and goat cheese. Whisk together dressing ingredients with a fork in a small glass or creamer pitcher, and pour over salads. Salt & pepper to taste.
