2 Quarts Sweet Potato (about 7 medium potatoes)
2 Oranges Juiced
½ tbsp. Orange Zest
1 cup Light Brown Sugar
1 cup Chopped Pecans
½ tsp. Cinnamon
¼ tsp. Nutmeg
½ cup Confectioners Sugar
1 tbsp. Water
1 oz Tipplers Orange Liqueur
Pre-heat over the 375 degrees.
Peel and dice sweet potatoes and boil till they are soft and can be easily pierced with a fork.
In a mixing bowl combine; sweet potatoes, orange juice, eggs, zest, sugar, and spices. thoroughly combine with a stand or hand mixer.
Pour mixed ingredients into a pre-greased/cooking sprayed bundt cake pan, and place in oven for 30 to 45 minutes. Make sure the bottom is well browned, but don't let it burn.
Let cool for 30 minutes, and then flip onto a plate.
In a small microwave-safe bowl and water and liqueur and heat for 1 minute. Mix in sugar with a fork till you have a nice syrup, and drizzle over the bundt casserole. Garnish with mint leaves and berries of choice.
